2 cold soup for hot days

For carrot soup Serves 4 - 6 medium carrots; - 1 onion; - 2 stalks of celery; - 1 tablespoon of margarine; - ½ cup fresh parsley; - 2 vegetable bouillon cubes; - 2 tablespoons soy sauce; - Salt with spices.

Cold cucumber soup with cucumber peel, cut in half lengthwise and then into small cubes shinkuem. Shallots cut into rings. Potatoes divide into four pieces and cut into cubes. Margarine is heated in a pan, add the shallots and simmer. Cucumbers and potatoes stew stirring for several minutes. In the broth add the tarragon, dill and salt and spices and cook in a closed pan for 20 minutes. Then leave to cool soup. We bring in a blender to puree the state. Refill soup soy sauce and add pepper to taste. Before serving, decorate with mint leaf. It tastes fantastic chilled on ice in a particularly hot days!
Cold carrot soup Carrot coarsely chop. Parsley, onions and celery finely shinkuem. The margarine is melted in a saucepan, add the onion and celery and simmer. Add the carrots, parsley and cook stirring occasionally. Water should be enough to cover the vegetables from about 2 to 3 cm. Add the vegetable bouillon cubes and salt. Bring to a boil and cook for half an hour over medium heat. We leave to cool. Beat in a blender to puree, add the soy sauce and serve.
