How to cook a real Italian pizza
Pizza can be considered a symbol of Italy. The main thing in this dish - the basis of a very thin crispy dough. Perhaps the most famous Italian pizza is the "Margherita". The colors of its toppings - red, white and green - correspond to the Italian flag.
You will need:
To test: - 250 ml of water; - 0.5 kg of flour; - 25 g of fresh yeast; - 2-3 tbsp olive oil; - 1 tbsp Sahara; - 0.5 tsp salt. For the sauce: - 1 tbsp olive oil; - 100 ml of tomato paste; - 1 clove of garlic; - 1 bunch basil; - Ground black pepper and salt to taste. For the filling: - 3 tomatoes; - 150 g of mozzarella cheese; - 100 g parmesan cheese.
Instruction how to cook authentic Italian pizza
Sift the flour, water, heat until warm. In a deep bowl, pour 2/3 of the flour and slide, make an indentation in the center. Spread 1/2 cup of water in the yeast and sugar. Instead of fresh yeast can take about 1 tsp dry. Leave for 15 minutes, to the mass of bubbling. Pour sugar-yeast mixture into the bowl with the flour and stir into the recess.
Dissolve half a glass of warm water salt. Pour the solution into flour and add vegetable oil, preferably olive oil. Knead the dough with a wooden spoon or your hands. If necessary, add water and flour. The dough should get the homogeneous, flexible, soft. Roll it into a ball. A bowl of grease with vegetable oil and reload it into the dough. Cover with a damp tea towel or cling film, so that the dough does not weathered. Leave on for 40-60 minutes in a warm place. Make sure that there are no drafts. The dough should increase in volume by 2 times.
Prepare stuffing. Tomatoes scald with boiling water and remove the skin. Make a cross-shaped incision and remove the seeds. The pulp of tomatoes and mozzarella cut into small cubes. Cheese rub on a small grater. Some basil leaves leave for decorating the rest chop, crush the garlic clove. For basic sauce, mix the olive oil, tomato paste, garlic and basil. Add salt and pepper to taste.
Preheat the oven to 200-220 degrees C. Roll out the dough on a floured board into a circle with a diameter of 30 cm and a thickness of 0.5 cm. Baking and sprinkle with flour and shift the dough formation. Prick with a fork in several places.
Brush the dough with tomato sauce, put the tomatoes and mozzarella, sprinkle with grated Parmesan cheese on top. The filling is evenly distributed. Drizzle with olive oil. Bake the pizza for 10-15 minutes until crisp. If it starts to dry out much, put on the bottom of the oven with a pan of hot water. Decorate the finished pizza "Margarita" basil leaves, cut into portions and serve immediately hot.
